The couverture chocolate is a superior quality chocolate, dark, white or milk, in slabs, pistoles or callets, used by professionals, chocolatiers and pastry chefs. It contains less sugar and more cocoa butter (31% minimum; which gives it fluidity, smoothness and good covering power, thus allowing a thinner coating. In addition, this chocolate melts and tempers more easily and allows make chocolates with a clean, smooth and shiny surface, without white marks, which mold quickly and unmold easily.
It is used for molding, coating candies, making mousses, ganaches, candy interiors, making chocolate candies or for decorating cakes.
